Easy Chicken Frittata

  • 2 garlic cloves, finely grated
  • 1 long red chilli, finely chopped
  • 120g baby spinach
  • 8 eggs
  • ¼ cup cream
  • Sea salt and cracked pepper
  • 4 cup pizza blend grated cheese
  • 1 cup cooked chicken, shredded
  • ¼ cup mozzarella
  • Serve with a mixed leaf salad

  • Step 1Press SAUTE, press START/STOP, pre- heat. Spray whole crockpot with oil. Sauté garlic and chilli for 1 minute, add spinach and wilt down. Press START/STOP.
  • Step 2In a large bowl, whisk eggs. Add cream, season with salt and pepper, add pizza blend cheese. Pour into crockpot and stir through spinach mixture. Place chicken and mozzarella on top.
  • Step 3Cover with glass lid, select SLOW COOK, adjust time to 30 minutes and press START/STOP.
  • Step 4Carefully remove cooking pot with a tea towel and allow to sit and cool for 5 minutes.
  • Step 5With a tea towel, place a board or plate over the top of the cooking pot, and flip the cooking pot upside down, allowing the omelette to slide onto the board/plate. Carefully remove the cooking pot and allow the frittata to cool before slicing.
  • Step 6Serve with a mixed leaf salad.
