INGREDIENTS

  • 1.5kg free range chicken
  • 1 thumb sized knob of ginger, sliced thickly
  • 4 cloves of garlic, lightly crushed
  • 5 green onion stalks, sliced into 10cm lengths
  • 1 litre chicken stock
  • 2 tbsp light soy sauce
  • 1 tsp sugar
  • 1 tbsp sesame oil
  • 1 tbsp kecap manis
  • 2 large cucumbers, sliced
  • 2 tomatoes, sliced
  • Finely sliced green onions, to garnish
  • Steamed rice, to serve

METHOD

  • Step 1Stuff the chicken cavity with ginger, garlic and green onions and place into the crock. Drizzle with soy sauce, sugar and sesame oil then pour over chicken stock.
  • Step 2Cook on LOW for 8 hours.
  • Step 3Remove chicken from the crock and allow to rest for 10 minutes before carving. Drizzle with kecap manis and garnish with cucumbers, tomatoes and green onions. Serve with steamed rice.
