Healthy Zucchini Soup

INGREDIENTS

  • 1 Tbs coconut oil
  • 2 red onions, chopped
  • 5 cloves garlic, crushed
  • 5cm fresh turmeric peeled and finely grated (or 2 tsp turmeric powder)
  • 20 zucchinis, sliced
  • 8 cups vegetable stock
  • Garnish with toasted pepitas, zucchini noodles and optional chilli flakes.

METHOD

  • Prep Time: 5 minutes
    Cook Time: 13 minutes
    Serves: 8
  • Step 1Select SAUTÉ on the Express XL Multi Cooker, press START/STOP. Allow to preheat.
  • Step 2Add oil and zucchini noodles, sauté for 4 minutes until soft remove, set aside.
  • Step 3Add onion, garlic and turmeric to the cooking pot, sauté for 4 minutes.
  • Step 4Add sliced zucchini and stock.
  • Step 5Secure the lid, ensure the steam release valve is in the seal (closed) position, press SOUP adjust TIME to 5 minutes and press START/STOP.
  • Step 6Once cooking has finished, release the pressure and allow to cool.
  • Step 7With a stick blender blend soup into a thick consistency and season with sea salt and freshly cracked pepper.
  • Step 8Serve with zucchini noodles, pepitas and optional chilli flakes
