Slow Cooked Silverside

  • 1.5 kg to 2 kg corned beef
  • 4 carrots, sliced
  • 2 stalks celery, sliced
  • 4 potatoes, peeled and sliced
  • 1 onion, diced
  • 1/2 head cabbage, chopped
  • Salt and pepper to taste
  • 1/2 bottle beer
  • 1/2 cup apple sauce
  • 1/4 cup barbecue sauce
  • 1 tablespoon balsamic vinegar
  • 1 clove garlic, minced


  1. In a medium sized bowl, combine applesauce, barbecue sauce, balsamic vinegar, beer and garlic
  2. Place the corned beef into the slow cooker, then use a brush to coat the meat with the liquid mixture.
  3. Carefully arrange vegetables around the beef, starting with the potatoes, then the cabbage, carrots, celery and onion.
  4. Season the dish with salt and pepper. Place the lid on the slow cooker and set on HIGH for six hours, or on LOW for nine hours.
  5. Remove the meat and allow to rest wrapped in foil for 15 minutes before serving.
  6. Serve with vegetables of your choosing.
