Zucchini Soup

  • 1 Tbs coconut oil
  • 2 red onion, chopped
  • 5 cloves garlic, crushed
  • 5cm fresh turmeric peeled and finely grated
  • 8 cups vegetable stock
  • 20 zucchinis, sliced
  • Garnish with toasted pepitas, zucchini noodles and optional chilli flakes.


  • Step 1 Select BROWN/SEAR and press START/STOP. Allow to preheat.
  • Step 2 Add oil, allow oil to heat. Add zucchini noodles and sauté for 4 minutes until soft. Set aside.
  • Step 3 Add onion, garlic, turmeric and ginger to the cooking pot. Sauté for 3 minutes.
  • Step 4 Add zucchini and stock.
  • Step 5 Select SOUP adjust time to 5 minutes and press START/STOP.
  • Step 6 With a stick blender blend soup into a thick consistency and season with sea salt and freshly cracked pepper.
  • Step 7 Serve with zucchini noodles, pepitas and optional chilli flakes
