Slow cook pork roast is tender and flavourful. This slow cook recipe is excellent for the days you want a warm and hearty meal.
Ingredients
1 kg pork roast
300g cannellini beans
100g onions
1 tbsp garlic
400g tomatoes
200ml white wine
200g carrots
100ml olive oil
Thyme and bay leaf to taste
200ml chicken broth
½ bunch basil
Method
- Soak the cannellini beans in water overnight.
- Brown the pork roast in olive oil in a medium fry pan over high heat. Once golden brown, add the diced onions and carrots, then the garlic (crushed only); before the vegetables are completely browned, deglaze with the white wine and reduce to half.
- Add the diced tomatoes, beans (well-drained and rinsed), the thyme, bay leaves and add the broth just to cover the beans.
- Let cook 6 hours on Low, and then check the seasoning.
- Before serving, add the snipped basil.
