Coconut rice is a versatile accompaniment for curries, beef stews, sticky ribs and more.
Ingredients
- 2 cups jasmine rice, well-rinsed
- 2 cups cold water
- 400ml can coconut cream
- 3 kaffir lime leaves
Method
- Place all ingredients in the cooking pot.
- Secure the lid ensuring the steam release dial is in the ‘seal’ (closed) position. Press RICE/GRAINS and adjust the time to 10 minutes, then press START/STOP.
- Once the cooking process is complete, release the pressure and serve.
